This recipe was very easy if you have all the right tools. Use parchmen paper so your ramikins lay flat.

Brown Sugar – I use light. I made this for Christmas Eve dinner and it was so delicious. I did it exactly as he said, but with parchment paper on the bottom because the towel didn’t let the ramikins lay flat. I used vanilla bean and doubled the recipe. I had it at a restaurant the other day and this was way better because of the real bean. YUM!

I tried this yesterday, it was absolutly perfect. Great recipe, great video.
Oh, btw, use REAL vanilla bean if you can, or vanilla bean paste. I used vanilla extract, and although it tasted great, it still tasted artificial. The vanilla flavour is a feature in this dish and has nothing to hide behind, unlike a chocolate chip cookie recipe; so use the good stuff for this recipe.

A good alternative to the blowtorch is to put them in a salamander, a toaster that heats from above. Works great for melting the sugar.
